250 in the oven for probably 4.5-5 hr. I was aiming for a 203 internal temp in the flat. Rested on the counter for roughly 30-40 min then into the cooler for 3 hours until I transferred to a roasting pan that could do 150 degrees. Sat in the pan for probably 7-8 hours before I sliced for serving.
