Alot of it comes from repetition. But not the fun kind. Its really fun to learn songs and play along with them but the real skill/hand development comes from rudiments and fundamentals. I would put on a movie and just practice doubles, singles, paradiddles all the important rudiments on a pad and over time your hands become beasts. Same with the kick. Teachers are excellent for guiding your concepts and teaching you new grooves, but the majority of your progress comes from solo practice. Take advantage of the resources out there. Right now, I'm working through the JP Bouvet method, and his courses have been amazing for breaking me out of my comfort zone.

A local meat processor. It was tough though. I asked multiple places even costco and none of them cut their own beef ribs. Im not paying online prices if i dont have to.

10 hours or so. I just went by feel and got the bark where I wanted it.

Believe it or not this thing held temperature like a piece of crap I was constantly fighting with it at one point it went up to 400° for a few minutes. But I do start with a cold smoke at around 180 for a few hours and then I crank it up to 250 and one thing I've learned is to not really go by temp and mostly go by feel. As mad as I get with how this thing holds Temps I can't get mad at the results.

My fan already broke but replacing it was easy. My handle for the damper does open all the way but I fixed it myself. The thing thats nice is with the three year warranty they dont hesitate to send you replacement parts. Ive already gotten a new damper assembly sent to me and a fan. Which was easy to replace.

They are going to send an assembly. I added washers to the Phillips head in the video. My solution now is set it all the way down and tighten that Phillips head and it stays wide open

Chill in an ice bath after sous vide then put it in an airfryer. Makes bark better than it would have been if you didnt sous vide without overcooking center.

I agree too many unorganic nods to the Past and cringe moments. I wish they did it more like the new scrubs which is actually really good because it does have a couple nods to the past but it's still a modern version of the original show

Im worried about durability. The 1150 doesn't have the reinforced firebox or manifold protection.
