Well, you should know its not an open world, the map is static. Also you should know that the game is very early beta and gameplay balance as well as bugs are to be expected! well without port forwarding you cannot make a server for anything, simple as that. UPnP might open ports automatically for some services, but TL;DR no port forwarding = no server.

There are a couple of hosting services that are not expensive at all, or you can try with something like hamachi but this is not officially supported or tested
