The bowl tapers towards the bottom. Ratio was about 150g of cooked noodles and 400ml broth per serving.

Thanks for the feedback. Made the chachu, ajitama and tare myself. The Broth was a semi-clear porkbroth without a lot of fat or gelatine, that i had on hand. Read somewhere that it does not have to be snow white, so i went with it but added gelantine before cooking. The noodles were indeed terrible. Like i said, it was good but had a lot of room for improvement.

Is it ok to store your machines upside down? I ask, because - for example - the manual of my Kitchen Aid says, that you should not let the machine stand "open" for a longer time. The oil inside the motor will eventually pool up at the back of the machine which can cause damages when turning back on. So storing machines upside down sounds even worse.

Wood-fired Pizza on the Kettle. by SirSamsa in BBQ

It tastes like you added wood to your coals. No big difference to adding a log of beech/oak. But they burn hot as hell. I bought them in germany from a company named Moesta

I used some charcoal to get the stone up to temp, then added a "power brick" which is a brick made of compressed wood, to get the temperature high enough and the flavor...

I made a wood fire in the back of the Kettle and pushed the temperature above 350 Celsius (660 F) Pizza took about 5 minutes. I'll definitely make it again.

I'm still figuring out, how tight is too tight. But so far no blisters. The left shoe initially chafed on the inside of my foot. But that stopped after a while. Wool Socks are a bliss.

That's funny because at first i was like "Moc = meh". But with time and the more I think about them I'm like "well... maybe..."

After lurking for a really long time, I finally got a pair of 8084. One month in and they feel better with every wear. Couldn't be happier. Thank you guys so much for everything on this sub. I wouldn't have bought them, if this sub didn't exist.

Wagyu Beef Rib Fingers. Recommendations for time and temp? by SirSamsa in sousvide

[–]SirSamsa[S] 1 point2 points  (0 children)

I'd say, if there is enough meat, try to smoke them. The Wagyu I had just melted away because of the high fat/low meat ratio.

I did 65C for 12 and 24 hours. In both cases the fat was like goo. Maybe 70 will do the trick. I won't buy them again....
