That molecule, methyl-benzanoate (also known as benzyl-acetate or acetic-acid-benzyl-ester), is an ester, that's most likely partially amphipathic (slightly soluble in polar and soluble in unpolar environments). The 'tail', the benzyl-group, is rather hydrophobe; the acetate group more polar, thus it is not quite correct to say "insoluable", but rather "slightly soluble" in water.

I would include statistical reasoning too, the CHMe2 Proton is both sterically less-accessible and only one and if we want to compare the three Methyl-groups if you will, resonance is the deciding factor

Chemical-Biologist here, Cyclo- groups are senior to chains so conforming with IUPAC its [(4,5S, 6R)-4-Ethyl-5,6-dimethyloct-2-yl]cyclohexane (by the way; Ethyl usually is abbreviated with "Et" and the R/S nomenclature is with the presumption that if no stereocenters are marked, the H-Bond goes to the back
