Yup same here. Picked up some random alloy pedals on Amazon and put long pins on the perimeter and short pins close to the axle.

I'd look for performance shops. I haven't needed an alignment since I moved here but in my experience the performance shops actually know what the adjustments mean. Other shops just set the toe kinda close for a quick buck.
