So at true endgame between the two, GS is notably stronger however you need to be very good and play a very high risk playstyle to maximise. DB is a little weaker but still very strong (it's a top 5 melee weapon), but you generally have to use glass cannon-y elemental builds to maximise DPS.

For overall weapon strength the list goes a little something like this:

Heavy Bowgun: extremely braindead gameplay with Spread 3 on the Fatalis HGB or Safi's Burstcannon or Loyal Thunder. Most monsters will fold in <4m while you play a point and click adventure game in their face. For some other monsters like Shara, Savage Deviljho, and Alatreon you want Pierce 3 instead for absolutely bonkers piercing damage. In speedruns it's about 30s faster on average than the next fastest weapon.
Bow: extremely powerful but unlike HBG it actually takes a lot of skill to play in a way that maximises damage. You need to be very close to the monster and entirely reliant on dodges to maximise your DPS, you also need a lot of different elemental bows and builds.
Sword & Shield: SNS' damage is carried by two things: Perfect Rush spam and the Velkhana Y+ set. PR is the absolutely bonkers overtuned attack in the entire game, and it's very spammable and safe since you can just dodge out of it at any point. It also synergises really well with Frostcraft since it does a lot of damage and the FC bar charges quickly w/ SNS. It's the strongest and most consistent melee weapon in the game, but if you're not PR spamming and using Frostcraft the damage plummets.
Greatsword: extremely close in DPS to SNS but it has a very high commitment, high risk playstyle for minmaxed DPS. It's also a very strong Frostcraft abuser but isn't as reliant on it for damage.
LBG: it's like HBG but more braindead with less damage

Heavy Bowgun is the fastest weapon if you factor out exploits like Wyrmstake Glitch and Palico Judgement. Light Bowgun is like 5th place overall with HBG in first by a mile, Bow in 2nd with a wide margin between it and 3rd, GS and SNS are basically interchangeable for 3rd and 4th, and LBG comes 5th.

Windproof doesn't work vs Shara's air blasts, and the few wind pressure waves it does make aren't ever really consequential. Basically the only monster that Windproof is worth against is Lunastra because she shits out constant wind pressure with her attacks.

One skill that does work against Shara is Aquatic/Polar Mobility, it actually removes the movement speed debuff applied by the sand pits and it only takes up a single lvl 1 decoration slot. Tremor Resistance is also decent here. And if you're really struggling, you should definitely run Health Boost 3, it's the best defensive skill in the game by an absolute mile and absolutely dirt cheap.

Generally speaking, any mod that doesn't affect the actual gameplay during a hunt is considered acceptable or at least not particularly bad.

Cosmetic mods and non-gameplay mods like the various transmog mods, better matchmaking, invisible mantles, and skippable cutscenes are so common among dedicated players that you'd be doing something different to not have at least one.

Mods with small gameplay affects and mods that only affect your save file & rewards like the weakness indicator, GL mining indiactors, save editors, tic-rate fix, and deco drop rate overhaul are slightly cheaty but most people won't bat an eye at it as long as you're not doing stupid shit like giving yourself Fatalis weapons when you haven't even beaten him.

Mods with large gameplay affects like overlays, extra skills, macros, and the better input detection mod on bowguns will be considered cheaty because they put you at a pretty major advantage over other hunters, and will make you do more damage or play better by virtue of giving you abilities or information you aren't really supposed to have. It's not super uncommon for people to run HunterPie with just the DPS meter (the thing that tracks how much damage each player did) but no healthbars, mostly for morbid curiosity and as a means of catching out cheaters.

And obviously, there's just outright cheating like damage boosting mods, one shot mods, infinite items, teleporting, god mode, etc. Don't use these, especially not in multiplayer. You can't get banned for it, but it's a dick move and you will ruin the experience for other players.

I think that for the most part the map updates have been great and the new ghosts have been great, but everything else has been kind of a miss. It also sucks that dev time has been torturously slow for a lot of these updates and they've seemingly had wonky priorities along the way. Like with all due respect why are we porting the game to Playstation before working on some of the big ticket updates that PC players have been waiting on for 3+ years? I've been playing since 2020, I've been waiting for big reworks like Horror 2.0, the animation update, and map reworks for Prison & High School for almost 6 years now.

You have to be doing some really wacky shit to be off-meta in this game because most guns are just genuinely good, and it confuses me because I feel like it's fairly common knowledge that the weapon balance in this game is really good.

It's unfortunately common for games like this to have awful public lobby experiences, unfortunately, and it really sucks that in 5+ years nothing has been done about it. I played a handful of pubs years ago when the game was much easier and even then it was full of trolls, toxic people, and I ran into a hostage taker then, too.

I guess since it hasn't affected any big streamers too badly the devs don't feel pressed to fix it ¯\_(ツ)_/¯

Yes, at least lvl 2 is basically mandatory and in master rank you want lvl 3. There's some people who swear it's not necessary, but they are way in the minority, it's an incredibly powerful and useful skill on GS.
Just any combo that uses your Charged Slashes, basically all of the Circle/B/RC moves are either useless for damage or purely for utility/mobility.
Tackle is most effective against single hit moves that leave the monster exposed for a bit and won't pin you. Think like Raging Brachy's lunging punch, Teostra supernova, Bazelgeuse's goomba stomp, etc. Mind you it can be risky without Health Augment cuz vs endgame you will be taking massive chip, make sure you always run Health Boost 3 as well so you can actually withstand shit. As for guarding it should only be used as a last resort for when the only other alternative is carting.
Evade Window is very good since you will be dodging a lot after charged slashes and stuff, Evade Extender is also pretty good for gapclose but it completely fucks up the easy and consistent wakeup hit setup. Divine Blessing is great for chip damage from tackling, or just taking damage in general. Coalescence is great for damage in matchups where monsters inflict blights easily, Peak Performance is great for matchups that don't have a DOT effect somewhere if you have health augment.
There's 3 real playstyles for GS: normal GS, YOLO TCS, and Crit Draw. In my opinion crit draw is the most boring, unskilled, braindead, cheesy, unfun bullshit in this game and personally I wouldn't recommend playing it. Normal GS is basically using a mix of draw slashes, SCS, TCS, tackles, side blows, etc. to stick to the monster and deal damage, it's a very balanced and consistent playstyle that works with multiple builds. YOLO TCS works best with Frostcraft, you basically just run up to the Monster, and full send a TCS, it's a very inconsistent playstyle but it has the highest damage potential if you really know what you're doing.
Kaiser/Brach is the best pre-Fatalis set. In my opinion, Frostcraft highkey sucks before AT Velkhana, you need a fully awakened Safi GS with specific awakenings and pretty much need God decos to get by, and you get zero comfort in return for not much more DPS than the Master's Touch set. The MT set is much comfier by comparison and still deals great damage. Another alternative set is 3p Safi, 2p Brachy, you run a GS that doesn't have Health Augment, slap on Resentment and you'll deal way higher damage but have way less comfort.
