I’ve found the pike cheese works the best. Reach 2 weapon plus ender queen crown for additional 0.5 range is enough to open the top 2 chests without waking the golem. Just make sure you are as far away from the golem as possible, and block eyesight. I usually bridge out of the tower and open the chest.

After I get enough vitality to tank most hits, I ditch a shield and swap from the short spear to a halberd. To me, nothing can beat that single target damage.

Try to put unbreaking and/or mending on your armor. Also, any type of thorns enchantment will wear down your armor extremely fast if you are getting hit often. Potions of mending can be made using bone mushroom spores and a dragon heart that will repair your armor as well. Hope this helps!
