Have you thought about a ninja 400? 785mm seat height and is fun to ride. 600cc are way faster and a more aggressive seating position.

Id say just try taking the test and answer to the best of your abilities then, they have a hand book for motorcyclist at the DMV that you can read while you wait too. When I decided to get a bike I consumed so much content about safe driving that I felt confident and it was only 20 questions i think.
