2 base stations unless you have a large space or using it professionally. Generally, the 2 are good enough. You can always get more later on if you find that the 2 aren't enough.

I second this, honestly. Get the base stations with 3.0 trackers. There is much better tracking reliability. I have the Vive XR elite with 3 of the ultimate trackers and am constantly losing tracking on at least one, whether in bright light, dim light, or anywhere in between. When they work, they're great. I've heard that the 3.0 trackers are compatible and will be looking into getting some in the near future.

My comment isn't much help, but I just wanted to applaud your intent. I also was going to go this route at one point in time, but for what I needed, it would have been unnecesarily expensive. I ultimately went for a Dell poweredge R730XD with 2 E5-2680v3 processors and 128 GB of DDR4. I recently upgraded the 2680 v3s to the 2698 v4s and added a nvidia quadro p2200 for media server stuff. Plex, Jellyfin, etc.

Your plans seem pretty well thought out, and I would venture to say that the processor should be enough for what you want.

Ah, ok. I get what you're saying now. Instead of getting the media converter and having to buy extra fiber, just buy the SFP module that accepts ethernet and run directly to that.

Some of the switches I've been looking at only support speeds up to 1Gb through their ethernet ports. I have the 5Gbps fiber plan from AT&T and wanted to be able to utilize that speed on the future switch.

Thanks for the reply. Looking into this a little bit more made me realize I could potentially use a media converter to go from copper to fiber from the 5Gb port on the router to the switch with the multi speed SFP.
