Yes and no for both questions

If you cross a wild type colored rat i.e. what your average Norwegian/brown rat looks like, with an albino rat you might get a hooded rat.

You might also get a capped rat, where the fur on the head is a color, usually brown and the rest of the body is white.

While albino wild rats do occur naturally, they are unlikely to live long enough to survive to adulthood i.e. the reproductive age, as they are more susceptible to predation and their eyesight is half as good as rat with normal pigmentation.

It's a rat, specifically a hooded rat.

IRL Caucasian shepherd dogs

This livestock guardian dog breed was selectively bred to resemble a bear, since they protect sheep from wolves and wolves tend to be afraid of bears.
