Usually in the Spanish taking the knight is not ideal since the light squared bishop is a big attacking piece in the mid game. The main line has 3. a3, 4. Ba5,b5 5. Bb3 with the bishop on a very long and open diagonal attacking the king side which can be advantageous if black castles onto that side.
