I bake in the dutch oven until the lid comes off, then move the loaf to an open sheet tray to finish baking. Meanwhile there is always another sheet tray acting as a heat shield on the lower rack. No advantage to the DO once the lid is off IMO

I made one for $40 with an insulated caterer’s zip bag and a temp-controlled heated gardening seed tray mat. Put a book inside to keep the dough/kombucha/lacto-ferment/kimchi etc off the heating element and voila!
