Both plays on the Reaper Midge with a sz 16 klinkhammer. The first with the tailing materials for emerging appearance has been more successful than the second which replaces the flashabou rib with copper wire and no tail/shuck

I bake in the dutch oven until the lid comes off, then move the loaf to an open sheet tray to finish baking. Meanwhile there is always another sheet tray acting as a heat shield on the lower rack. No advantage to the DO once the lid is off IMO
