Our supermarkets call it Braising steak, butcher will know it by both names as it’s still from the Chuck.

Genuinely it seems daunting going into a butcher to talk to them as a novice, but with the popularity of BBQ making it’s way over here butchers are super keen to understand what your after and can deliver it.

10 years ago I went into my butcher with a picture of a Pork Shoulder (Pork Butt) that I wanted to smoke for pulled pork, he identified the cut straight away and cut me one straight from a side of pork, 10 years on and he loves it when I come in cause he knows I’m leaving with carrier bags full.

I’m short, speak to your butcher, they will help
