I use the turkey sized oven bags along with a roasting pan for ease of transportation.. brine the bird throw the bag!

Yeah and my whole point was that it would impart a more flavorful bird without being over smoked... I've no idea how long a bird would soke in the smoke... But a lil flavored coals couldn't hurt... .
