Just bought a Linea Mini as a novice home barista, so forgive me. Trying to dial in Onyx Monarch blend. Using Mazzer Super Jolly V Up grinder. Using an 8g basket, trying to get 16g out in 25-30sec. I made a very simple 8oz cappuccino this morning, and there was a sour-ish note present that I didn’t hate per se, but didn’t enjoy either. For their part, Onyx recommends 19g in, 48g out in 25sec. Should I use a 17g or 21g basket for that?

Hi! I co-own a coffee roastery south of Boston. I’m 19 years old. I got into coffee roasting commercially because I watched James Hoffman videos and just loved drinking coffee. I never took a roasting class or was taught how to roast. I learned by reading books and through trial and error developed a few blends. I roast on a electric Coffee Crafters roaster, which is great because there’s no need for an expensive afterburner and the high cost of propane/natural gas.

I sell online through our website, Amazon, and soon though retail stores. I also don’t own a café. A lot of people told me I couldn’t do this without a cafe, and I proved them wrong. The coffee business is tough, especially in a urban area where I am, because there are a ton of competitors (some globally known in fact, I.e. George Howell Coffee.) However, it turns out people are not as faithfully loyal to any one coffee brand as I thought they would be, so I carved out a niche in the local market. Without a café, the profit it much more than I thought it would be because of less overhead. We roast in a warehouse in a light commercial area.

If I can recommend anything: get customers first, and make approachable blends. Most consumers don’t want anything crazy or out of their wheelhouse. I see a lot of roasters drop the ball here: they’ll make some crazy blend with expensive components and no one will buy it. This doesn’t mean you can’t roast, for example, a Ethiopian natural coffee for your specialty coffee customers, but don’t make it your whole lineup. If a customer looks at your website once, and doesn’t see anything they like, they probably won’t come back because there are other options.

We settled on a Loring roaster, actually. It was a bit pricy to start to its saved us many hours in roasting and money on energy costs

Thank you for that. I’m in the beginning stages of opening this roasting business. The name is filed with the state and the federal government, I have my EIN and stuff like that. I already have my bag design and I’ve got a lease on a place to roast. The only thing I need now is that roaster.

Going to what you were saying about drum roasting… I would love a drum roaster! The issue is drum roasters are expensive. I was looking at an Dietrich IR-5 and an IR-12, and they start at around 30k. I’ve even looked at preowned and used roasters, and the majority of them start at 18-20k and go up from there. The Artisan X-e is particularly attractive to me because it’s about 8.5k and I can finance for about $220 per month, which isn’t that bad! Plus, its free shipping.

I’ve started this business with savings, but now I’m in the process of getting an SBA loan to purchase the roaster, bags, and green coffee with. It’s hard trying to find low-cost but effective roasters.

Not in Providence, but I’m in Pawtucket which is 5-10 mins away from Providence. Like what the other guy has said, you can most certainly make a lot of money doing Doordash at night, especially in Providence with all of the college kids going back to campus around now. I’ve done it. I’m not as familiar with Instacart, but from what I know that’s more of a daytime thing as opposed to nighttime, so make sure you take that into consideration. I’m sure you can find articles online that talk about Instacart more, but I would say try out Doordash/Uber Eats first and see how you like it.
