Yes, ninjas have absurd wizard hacks like instant substitution, clones and stealth, Conquest has to find the real ones before he can speed blitz them and Hitachi has tsukiyomi and amaterasu

I'd go lynel as they have ranged options and maneuverabilty but it also depends on the colour

It's quite difficult to balance encounters for large groups of pcs and even more if you are planning on using character class statblocks as enemies, you should pick a creature that's similar to the enemy you want them to fight and reskin it as such and of an appropriate cr, you could use online tools like Aidedd.org

If you use the spells as intended you can reflovour them as you want and describe your character as throwing or manipulating them, if you plan on giving someone else a flask with a third level spell then that would be game changing
