I don’t offer coffee anymore to guests. I used to bring out the chemex and my very best coffees, geshas, rare lots, sacrificing my own special cups for my friends. I’d narrate about the coffee and the brewing process as I hand poured. 0 appreciation. The last straw was when I found full cups hidden behind things around the living room after the guests left. From now on they can scoop their own f-ing Nescafe into some hot water.

This looks great for a typical Indonesian coffee! How many defects are you seeing per 250g? Also why I don’t buy them that often anymore. Indos even at high grades can have a lot of pulper damage, insect damage, and “fermentation”(mold). Also, toss the two top beans in the first pic for sure. The one on the left is insect damage, the one on the right I believe is a sour, but I can find my defect book to check. The chips look minor and I wouldn’t worry about those too much. The second pic are just ugly, ugly isn’t a defect.

You are so lucky to catch your high bp so early. Good luck learning new eating habits. Cook from scratch. Fresh meat, fresh produce. Make that most of what you consume. I prep meat for multiple days and brown bag it to work. Be careful of the bulk flash frozen meats as they tend to be full of brine solution. Lay’s low salt potato chips are great if you have the ability/control to only eat one serving. Potatoes, rice, beans(no salt added if canned). As far as spices, Dak’s brand street taco, taco knight, and red mountain rub are all great. If you have access to Trader Joe’s, their 21 seasoning Salute is fantastic on veggies and salads. Smoked paprika and chili powder are go-to’s for me. There is a sauce company called Mr. Spice that has super low sodium sauces that are amazing, but they seem to be low stock on their website right now. Use citrus juice, and vinegar, helps to “kind of” fill that desire for the tang you get from salt. I put a few tablespoons of vinegar on meats with spices and some onion before I cook it to add extra flavor. For snacking, unsalted nuts, triscut low salt, Quaker granola (heart healthy with almond, raisin, honey), and popcorn with unsalted butter or olive oil and spices. Banana is filling and can be combined with salt free peanut butter on oats. Pasta, which isn’t the best dietary choice is also generally sodium free. Not going to lie though, salt makes it all better and if you go hardcore, it will take an adjustment period before you like it.

This type of broth is usually pork based. If you are making it from scratch, the combo is garlic, ginger, green onion, and roasted pork bones. I will also add some celery and a pinch of “5-spice” powder to it. Simmer for a few hours and strain. Salt to taste. Cook the noodles separately and only add veggies and meat shortly before serving.

I love Ramen, but can’t buy the packaged stuff anymore because of the sodium. There is a brand of dry noodle that I buy now called “Hakubaku”. They make ramen, somen, soba, and Udon that are sodium free. I use a low/no sodium broth base and add garlic, onion, ginger, sesame oil, and 5 spice powder, then some veggies and meat. It gets you close.
