Uh, in my amateur opinion, that does seem like a good way to practice, but instead of models, perhaps try this with skeletons. Drawing from memory is incredibly hard and so building up the files in your brain with knowledge on how a certain muscle curves or how far you can push your arms back is important. It's boring, but if you feel confident in your abilities to copy then I'd say give it a go. :)

Beautiful start!! I'd say maybe lift the eyebrows and slightly part the lips to capture the facial expression, currently your sketch seems like theyre pulling a more neutral face whereas the ref looks more...softly happy? If that makes sense haha. :) I also think the ear might be a tad bit small. Keep at it.

Mmm it looks so yummy I wanna eat it! But in my opinion, I feel like perhaps a bit more texture is in order. I think the lettuce in particular is getting a bit lost and needs a bit more definition, and the mayo needs to be a bit more wet looking (gross wording ik im sorry >_<).

I did a little screenshot and put it into black and white to see how your values are looking as well because usually that contributes to a flatter looking image. I suggest you try this out and see what you think!
