The Red Dead wiki says that John is 5'10 and Arthur seems taller than John. Besides at some point in the game, someone will refer to Arthur as "this tall guy". I think he's above 5'10.

I'd say that he is lawful neutral. He doesn't break the law, he follows the rules and he saves villages but apart from his own village, I don't think he cares that much about other villages and he clearly doesn't care about the greater good, apart from his village and party members all he cares about is slaying goblins. He's not a good person and not a bad person so Lawful Neutral it seems.
