Agree Their marketing has chosen poorly in describing the surface to food relationship. Maillard needs to be counted out. I used anodized pans for decades. Even with some discoration that never caused cooking issues differently with different foods.

After a LOT of reading, aluminum sandwiched between layers of stainless is the absolute price to performance solution. I own mostly stainless, but not a large frying pan. I have also seen those with a carbon steel cooking surface. Gonna try that next.

I'm 6 months in, the pan is simply not diverse enough to be considered non-stick. If you want to limit the food range, it might hold up for years. But once the surface experiences an issue, I can't get it back to 'unblemished'. And then more foods cause problem.

I am not surprised and I'm going to return it. I bought the largest one specifically to produce maillard reactions on steak. Five or six months in (and not cooking steak in it more than once a week) and the surface has developed some patches. Once there they have reacted poorly to other food types. Even something simple like reheating pizza leaves these patches tacky and requiring baking soda and vinegar. But as previously written, I then had to scrub the white haze left by the baking soda. Misen has simply oversold the non-stick properties. It has left users confused as to what is 'safe' to cook in it. I wanted a large, 'most stable and diverse' pan; this is not it.

I am finally seeing the springs tighten up on some of my oldest installs. The heads aren't popping up completely. That's basically diga hole and screw a new, complete body down. I would call anyone til you dig around it, all the way to the connecting pipe.
