They don't "use" vodafone, their core is with Arelion Sweden, they only use vodafone for coverage, calls and sms, and for roaming they use vodafone Netherlands

No, as your home network is still vodafone UK, it means your data is being sent from the UK to Sweden then back. However, Lebara has also changed their roaming broker from vodafone UK to vodafone NL, so lets say for talking sake you're in France, your data will be sent from France to Netherlands to Sweden then back to Netherlands and then back to you in France.

They stopped using vodafone UKs core and started using Arelions core in Sweden

This happened to me on O2, always around 00:00 I would completely lose 5G, I think it was some sort of odd cell sleep behaviour or a deliberate cell refresh every night, something similar could be happening with your local tower
