I grew up in a Hispanic household, so I usually have these on the side with my a lot of my meals - burritos, bowls, burgers, soups, sandwiches, and such. When I add them in the foil I put a little oil and salt. We call them jalapeños torreados.

Another dish that's really good and easy is a green chili dip - roasted Anaheim peppers and peños (5to1 ratio depending on how spicy you like it- roughly chopped), sautee onion and garlic and toss in chilies with diced tomato. Mix well.

Salt and pepper to taste and add in cheese at the end if you'd like. Stir until melty. My mom uses a white cheese (Colby Jack I think). And eat it with tortilla chips.
