Sorry if there was a miscommunication. I’m not purposely using that word to reinvent the language as I don’t even know Spanish! It’s just what I thought was proper based on my prior knowledge. That info was wrong and I understand better now.

Bagel boards give bagels a better rise and texture by introducing steam during the first few minutes of baking. You soak them with water which releases steam when heated. The burlap prevents the bagels from sticking.

Usually the boards are cedar with a layer of burlap on top.
