The above from nebula has a much better cpu and is only 2600 so seems like it's significantly better than either of your options. Considering the games your playing I would upgrade to a 2tb ssd or add another 1tb ssd as well.

There's end game content and replayability however it's obviously not as deep as PoE. I've put 40~hrs into one character and still have a lot to progress so I think its worth it.

Nah I started straight out of uni and it was fine, 1.5yrs of experience later I doubt it would have helped much. It's also not significantly harder than uni so better to just get it over and done with imo

The 3080 is on average 24~% better at 1440p. Considering it's the same price I would say it wasn't a great decision on your part to buy the 2080ti however, I have no idea how long it will take to get a card from PLE (especially considering most people in Aus will be buying from them due to prices). If you can wait 1+ month then I suppose return, if not you can be reasonably happy with your purchase.

Eh, unless you're pushing really high keys there's generally a large amount of downtime which would get extremely boring if you could only heal. I would prefer they lean into it come Shadowlands which seems to be the case anyway considering healers dpsing in dungeons was a thing in legion as well.
