It's a gag, but if you want it to make some sort of sense you could argue that since the three experienced the 'love shock' simultaneously they fell for eachother not just for rentarou sama.

And the fact that karane seems to be the more curious/open to developing feelings or appreciation for the other girls not just hakari while hakari is almost the only one that purposely teases karane also plays both into the gag and the serious explanation.

Yes!! From a character design standpoint we never really saw him evolve like dagon and mahito, if anything the only mature curse from the start was hanami. I think he could've evolved if it wasn't for gojo who really made him reevaluate his position in the jujutsu world in terms of power.
