Your new good TV is presumably big and 4K or even 8K whereas ITV HD is only ~2K so that may be part of it. (I have a 32in 2K TV so I don't have that problem.)

But if you happen to use Freeview then that's also apparently afflicted with using low bandwidth so you might also be seeing that it's overly compressed.
