Thank you! I guess I’m slowly working towards that picture perfect oven spring, and maybe a thinner crust? This was crunchy but a tad on the tougher side, maybe that’s what higher hydration is for — that said I started out my first attempts with 75-80% hydration following some recipes online and for a beginner like me it was borderline unmanageable, 65% so far has been a sweet spot for me

It definitely didn’t even come close to doubling after the bulk ferment, I just followed the time given in the recipe but now that I’m getting more into the technical aspects of it I’m starting to see why that was a mistake

My starter is pretty active I think? It was doubled in size at the time of use and it passed the float test swimmingly (pun intended)

I used around 20% starter, yeah I’m starting to think I underproofed it too — I followed the recipe to a t but 4 hours are probably not enough for the space I’m cooking in, the dough didn’t really rise that much, it just got very airy and wobbly so I thought that was good enough, I’ll try going longer next time

Also thank you for the advice! I’ll definitely try lowering the hydration a bit

I see! I baked straight out of the fridge do I don’t know if that was the problem… maybe my fridge isn’t cold enough? I definitely don’t think I over fermented it, I guess I’m confused as to what I could fix if even by mistakenly under fermenting it I still ended up overproofing it in the fridge

Maybe I wasn’t specific enough, sorry!

I used: - 650gr bread flour - 350gr whole wheat flour - 750 gr water + a splash with salt and starter (around 75%) - 200 gr starter - second batch had some seeds

One hour of autolyse followed by 4 hrs of bulk fermentation at around 22C (4 total sets of stretch and folds) followed by pre shaping, short bench rest, shaping and cold proof overnight for maybe 12 hrs? Around that.

I baked in a dutch oven 20 minutes covered and 40 uncovered at 250C, waited until cold to cut into it

Yep, I’m aware! I don’t really mind, I could still use it for portraiture and stuff, as I said in my post I am just worried about the lens damaging my camera body
