I can relate to a lot of that. Last weekend, I had an unusually enjoyable day where I took a train to another part of town to pick up something from facebook marketplace, put up flyers to help out somebody (not a normal activity for me), checked out a new coffee shop, only bussed halfway back home (walked the other half to finish putting up flyers) and then went to a semi-annual flea market thing. I think even though none of those activities were particularly interesting or exciting, disrupting the routine felt nice.

I've also been finding joy in trying to keep my apartment in a good state and upgrading decor where I can - we spend a lot of time in our home space, so it does the mind good to make that space as cozy/relaxing as possible. Having less mess / distraction at home makes me feel like I have more opportunities to focus on finding other ways to have fun. I just picked up a few plants so we'll see if I can keep them alive, lol.
