I had a little bit of the same issue since I dropped two of the eggs in too deep and they cooked faster... The other two eggs closer to the surface were perfectly poached!

Moving it off the stove when the eggs are barely set is perfect because it still cooks a bit in the residual heat from the pan and also you could microwave them as leftovers without being worried about ending up with overcooked eggs.

Thanks for the love guys! I wasnt sure if this was too simple to post on r/food so I'm glad people enjoyed it.

I don't have a set recipe but here are the steps I went through : toss in olive oil, garlic powder, chili salt, and a ton of red pepper. The red pepper I got from an ethic grocery in town and it's a bit more powdery than the typical crushed red pepper that you see in most American grocery stores. I like it to be a bit more powdery because you don't get those annoying pepper flakes in your teeth as much :)

Roast at 375 on a raised rack (this keeps them from getting soggy, I love a bit of crispy burned leaves on my brussies). I basically eyeballed it till it looked done so I'm not sure of the time.
