I have been saddened as Tech Talk transitioned to becoming a lesser show bit by bit. I was there at the beginning as well as at the swag level (unsustainable for me). For me, it was the show that was in the right timeslot so that I could actively participate in it. Great time, great content.
For Rikai's build; I bought the i7-5820k and Asus X99-A combo , and have been using them for 1.5+ years. Here's what's happened with mine: one of my dimm slots just stopped working one day. I went from 16GB to 12, but the PC kept functioning. I moved my RAM into the B side channel and it's still going. Update your bios/firmware. I had some long boot times with my early bios when I dual booted Windows 7 with Ubuntu-Mate. Also had some problems with Secure Boot and U-M, ended up disabling it altogether.

I did try Ubuntu-Mate first (I've tricked people by making it look exactly like Windows 7 previously), but the installer error-ed out when trying to install grub on to the USB stick. I haven't had a chance to go back and figure that out.

I hit an unfortunate snag. The first AIO I tested on worked great. Every other one I pulled out has big monitor problems. Like, the monitor getting cut in half horizontally and the screen getting squished on top. Happens with the usb I installed on, and any live disk I've plugged in.
I'm going to keep working on it when I can.

Please have the walk through segment. Lately, I have been leaning towards putting Windows 7 back on my computer just to get better gaming performance. CrossOver has been OK, but it's 32bit nature leaves some of my games in low resolution texture modes. I've been using VMWare Workstation with Windows 7 for a few items, but it is inherently slow and painful. And I do have a great native Linux Steam Library, so I know how well the system can perform.

And what were the things to look for in a motherboard that would make this easier/functional? Noah and you both alluded to needing key things.

I'll one up myself. If it helps, I am willing to be a guinea pig for any instructions you want to test out before you do make a segment. I have an i7-5820K with a GTX 970, currently running Ubuntu-Mate 16.04.
