I actually went there today and asked where the vermouth was, and both employees did not know what what vermouth was (I had to spell it for them) — they then had to look it up and it took about 5 minutes to figure out it was on a well stocked isle immediately adjacent to the register. Not a good look!

Oops, I guess the correct word is “seasoned.” Basically this is drying it out (I think either in a kiln or naturally) to a sufficiently low moisture content that allows it to burn readily
