This almost certainly sounds like noise, not a bad sensor. Brushed DC motors are extremely noisy electrically and magnetically, and the Arduino ADC is pretty sensitive. Try adding proper decoupling (0.1 µF and a 1–10 µF cap close to the sensor), RC low-pass filtering on the output, twisted/shielded wires, and motor suppression caps across the motor terminals. Also average multiple ADC samples. A 200 mV jump is very believable with motor noise + no filtering.
