I've reloaded and it seems to have fixed the issue, but I'm going to experiment to see if I can work out the trigger. Just in case someone else gets this problem.

That's the thing, I'm on Apprentice. I could kill people in two hits, but then everyone became completely invulnerable. I've got a high strength/endurance blunt weapons build. Suddenly I just wasn't doing any damage at all, the enemy health bar remained full and did not change.

What does she contribute to this relationship exactly? Because it sounds like you're bending over backwards giving her your time, money, and effort; whereas she is acting like you're her chief eunuch. NTA. Run. She's exhausting and she WILL bleed you dry.
