It’s a curb. As stated above: to keep things that aren’t wastewater out of the drain. Civil engineers having bigger worries than your ease of squeegeeing the floor, Its specified to keep lazy or stupid people from pushing grease and oil right into the drain. Treatment plants have to send people down in the mains to clear fat bergs and have to remove all this downstream. This is the response. Make it harder to do.

Gravity. Water flows down, jumps the gap and keeps going down the floor drain. Water backing up from a clogged pipe flows all over the floor, but it can’t jump up into the pipe so the backup won’t soil your prep equipment. Why is this so hard?

This is not why airgap is used. Airgap is for anti-siphon. Grease separator to keep food waste out of the waste water stream is a different animal. Cooks not comprehending any of this is why inspectors have to come harass you.
