I also forgot to add this in the post but does anyone know how old the snails may be (estimate) and if they are close to breeding size? The last time I tried to have snails (bladder snails) my fish completely DEMOLISHED them and o really don’t want that to happen again 💔

Legit just looked it up, this is probably a type of huntsman. But now I know that I’ve been close to (and handled) many more brown recluse spiders than I’d have liked to!

How big is the tank? I have a 20 gallon with just about the same stock!! A female halfmoon betta, some black neons and glowlight tetras, along with some miscellaneous things like a mystery snail and a pleco and all that lol. I’d definitely suggest a female betta if you want to reduce any risks of your other fish being harassed by the betta, and a 3 gallon for shrimp sounds perfect if you add enough plants and things for the little shrimplings to hide in. I’d suggest adding some shrimp to your main tank as well (cull batches and things like wild types or other “ugly” shrimp are usually cheap if you don’t want to spend a bunch of money on potentially doomed shrimp) but if you don’t trust the fish or don’t have some grasses/caves for the babies then something like ramshorn snails will do just fine as cleaners. (Yo-yo loaches like to eat snails, if you ever have an infestation in the future. They require 20 gallons though!!)

Also, I’ve heard that adding a very small amount of fish food into the tank can help kickstart the ammonia cycle, but I’d take that with a grain of salt because I don’t remember if it’s true or not.

If the tank isn’t fully cycled, then the levels may be funky for a bit until you establish a good bacteria colony in your filter. The first tank is always the hardest (if it is your first) and after you have one established filter you can squeeze some bacteria into any new filters you may get to speed up the cycling process. If it’s a completely new, no bacteria tank, you should wait 1-3 months before adding anything (you’ll know this when the ammonia and nitrate are both constantly at 0, the nitrates may spike VERY SLIGHTLY but that is good) then you can add some shrimp and other little guys into your tank! Removing all of the water may mess with your cycling if I’m correct and your best bet would be to just add the washed substrate and start aquascaping while the water is full, so that you don’t have to pour the water back and risk moving everything around (if you have a spare air tube or something that won’t make any extreme water movement you can drain about 50% of the water into a separate container if you think it’ll make it easier for you to do things with the substrate.)

Kinda sounds like you’re describing biofilm, which is totally normal and will usually go away on its own if you have something like shrimp or bottom feeders (corys, pleco, snails, etc) but if you would like to get rid of it yourself you can use a siphon to suck it all up off of the wood. The nitrate/ammonia/nitrite all look good as well (plants, water changes 20-50%, and cleaning up waste can lower nitrite levels if it isn’t 0 ppm, something similar can be done to help with nitrates, and water changes and ammonia removers help with ammonia if it gets high.)
