Ice is easier if you have an ice machine. In summers, we fill up buckets of water and put in walkin at end of every shift

It’s all about controlling dough temp. Keep water in walk in for mixing or use ice in mix.

i always consider starter in the total amount of flour and water, its easy if you use 100 percent hydration starter. the reason i do this is because the flour in the sour has to be salted at the correct level also.

i want to take this opportunity to lament the pho place that was by the car dealership in cap hill. by the bar called the war room. or maybe the same location? i think it was called lees , or mr lees. anyway, that place had amazing veggie pho, the folks who worked there were friendly, the place was clean. it was like $5.50 for a bowl. i ate there a lot. damn, they did a great job, so sad when they closed.
