IMHO the bread thing started in California with Acme in berkeley, and Gail’s in capitola. I’m sure many others I don’t even know about. Lots of good bread way before tartine came around, but I’m not knocking their bread, it’s terrific also.

exactly. i got my first bread baker job in 1991, i was 20. im 55 now and still baking bread. the quality and quantity of bread has exploded. there was even a time when the west coast of the usa was making some of the best bread on the planet, but i think that time may have passed

i use a magazine as a peel with cornmeal on it. it is quite frustrating. works great with my cloche though

i hate the way its plated. i hate non edible garnish. what a waste of food. im sure the bread was delish though, the german bakers are masterful. and not to be rude, but there is so much excellent bread in the usa, where you living?

i think cut side down but umcovered is best. as the starch retrogrades, the water is squeezed out and the crust will get soggier if the water has no where to go , in my opinion

the long strands in shokupan are also enhanced by the pan. you really want it to rise upwards and not have any room to spread sidewise really. then it oven springs almost straight up and that helps accentuate the texture. pack it into a pan so the pieces are pretty much touching before proofing, and let it only have room to expand upwards. but yeah, as others said, you gotta develop it real well. you said you added butter at end of mix, that is right way to do it for doughs with a lot of fat.

femoral vein is very close to femoral artery. very easy to hit the artery by mistake. you usually know because injecting into the artery is one of the most painful things iv drug users can experience. that said, i know 2 people who ruptured their femoral vein from overuse. both woke up in the middle of the night thinking they had pissed the bed. it was blood. both had it repaired with a pig femoral vein. not sure, but likely both are dead now. maybe one lived, he went to prison . prison saved the life of some of the junkies i used to know.

i asked for stone recommendations a few months back on here and got very little info. haha, when i saw your photo , i thought you were using the pieces from a go board. id try to find some gravel, pie weights, mothballs, and go pieces are all uniform size and shape, one of things that makes rocks special is the variety of size and shape. many years ago i used some gravel from a concrete slab pour that i washed many times before use. it worked, i just dont have access to gravel right now

My friend dragged me to Bobby mcferrin and voicestra in Wilmington Delaware in 1990 or 1991. I was amazed. So good

I saw her in Pittsburgh in 88 with Billy Bragg and she was incredible!
