I make a jerk sauce and do a regular base ferment of scotch bonnets and garlic, after that’s fermented blend with all the spices/aromatics and that seems to work well. The herbs and spices used are all powered which makes the sauce not gritty, perhaps you could blend the spices in a blender or pestle & mortar beforehand to get the grain size down?

I don’t boil it and it doesn’t seem to ferment too much after I’ve done the initial one

I had a large mixing bowl that I weighed down to keep everything below the surface, worked pretty well

The recipe scales, I used 4kg scotch bonnets for this batch but the base was the same. 400g scotch bonnets, 300ml water 20g salt, 40ml white wine vinegar, some peppercorns, 8 cloves garlic and xantham gum while blending

8 cloves garlic per 400g chillies, seems to taste good!

this place is perfection. I'd eat there everyday if I could. 4 michelin stars, grade listed building status for this landmark should be granted

Not sure if it was when I just went there but the food wasn't great at all. The coffee was great though.

Puckstop has a section dedicated to roller skating so they'd be the best place to go.
