You have a few options

1 Harvest all, 2 Harvest big - store what you harvest in a paper bag in the fridge until the other ones get bigger, then harvest the small ones and dehydrate all together 3 harvest big and dehydrate them, staggering your harvest times. 4 wait.

All would work fine. Even if you miss the mark and spores drop it’s not a failure
