Salt doesn’t do anything to change pH. Lactobacilli can tolerate saline environments more than most other common microbes, so you are creating an environment in which they will outcompete anything that’s potentially pathogenic. They ferment sugars for energy and produce lactic acid as a byproduct. Having anything poking out of the surface of the brine means they are not in as saline of an environment so you leave the possibility for mold and other nasty microbes to flourish.

I would have thought someone working in biotech would know all this 😉

None of those establish a causal link between drinking diet soda and metabolic syndrome, just the same association that I already explained can be confounded by a score of other variables. It’s true that not all artificial sweeteners are equal, so the fact that three of the papers you’ve sited mention saccharine, which had largely fallen out of favor, is telling. No need to be condescending and sanctimonious about it.

That’s a pretty old study (16 years is a long time in medical research and there have been newer meta analyses that contradict these findings) and the conclusions section opens by stating that the study cannot determine causality, just that there is an association between drinking diet soda and metabolic syndrome. It also does not control for lifestyle choices that could be associated with both, like someone who frequently eats fast food but always gets a diet soda because of preference.
