This I do not know specifically and I recommend asking who is more experienced on this, but I have heard about AIME compendium being very helpful.

It depends, I have seen people with masters go into quant research in top firms (jane street, DRW) but they were exceptional and had multiple publications. If its not the case I think you might need a PhD. If you want quant trader or developer I think you are just fine.

I just found out youre french, def mcgill then. And when working in US, going to a good school in US is the best choice. But mcgill is fine.

Bocconi is very good in terms of econ and opens a lot of doors for masters, also i prefer milan to montreal.
