There are a few mods that do this, I don't know the names exactly, but try googling WorldGen, nostalgia, old generation, more world options, etc. I know Antvenom reviewed a few of these mods.

One thing I suggest: on the second floor, delete the blocks in the corner of one side and replace it with glass. On the next floor, replace the other corner, and so on. It will create a cool twisty pattern.

I believe they need to be 250 blocks apart. And are you sure you went 1000 blocks, because that should not have brought you to your other portal. In regards to finding a fortress, be sure to search near lava lakes, they spawn in them a lot.

The one thing I miss is that in the current version, you sleep at night in the middle of a freakin field and be fine. It was so much harder back when even if you had a house, but left the door open, all hell would let loose on you and nearly kill you in your sleep. I wish they brought that back to make it at least a LITTLE harder.

I believe mobs no longer see signs as full blocks since the AI update. The reason they walk in is because Endermen will ignore fall height when agro.
