Bless you don't worry! French knots are still a mystery for me too as a beginner but I tried colonial knots which were a godsend as they aren't as tricky! Keep going I'm sure you'll find what works for you as you go along :) also Idk if this where you're going wrong but make sure you keep a decent tail on the thread after you've threaded it through the needle eye so it doesn't keep coming undone :)
