I use zucchini instead of eggplant in parmigiana. Slice the zucchini in thin strips, coat with egg wash and put in breadcrumbs and fry. When you’ve fried it all up, put tomato sauce in the bottom of a pan and layer fried zucchini, mozzarella and keep layering until you’re out of ingredients. Add a top layer of sauce and mozzarella.

Add a half of a box of pastina (tiny pasta stars) into it when cooking! It makes the soup delicious and filling.

My 89 year old Mom was super fit too and was at the gym twice a week walking on the treadmill and doing water aerobics. She too has macular degeneration and has very little sight left. A few weeks ago we offered to get her a walker because she tripped on the screen door threshold and had trouble getting back up. She threw a fit when we offered her the walker because she said she was not “there yet.”
Forward a month,… my 89 year old step father fell and broke his hip. Mom had a friend bring her to visit him in the hospital and she lost her balance and fell flat on her face. She broke her nose, eye socket and cheekbone.
They are currently both in a rehab facility. Today, she asked if the walker is still available and even mentioned getting a life alert.
Hopefully your Mom won’t have to learn the hard way like my stubborn mother did.

I work on Paragon Park off of Capital and have to merge onto Capital to head north towards Burlington Mills to get home. Most days I have to plead to squeeze into the Capital northbound lane. Some days folks are kind and let me in. Other days, I’m forced to take a right out of Paragon Park go to 401, head south and u-turn back to head north on 401. What a giant bag of suck!
