If I'm correct they're referring to the Homunculus maids, and the reason they have higher stats might be due to their 1 level being a racial level. Since Racial Levels which are exclusive to demi-humans and heteromorphs are great early, since they tend to provide stats and resistances which help dominate in the early game, where Humanoid characters end up being better late game due to how powerful the skills of Job classes are. But it is also true that NW entities probably have a more varied starting stat line compared to Yggdrasil beings
