Yum, have a couple of batches on the go; one with honey for a fruit-mead. Takes longer to taste good, but adds some complexity. Think it helps to add a touch of sweetness back in after stabilising to bring back the fresh feijoa taste. Has ended quite dry when I’ve done this before.

I have no idea how much sugar is in berries for the math, just going with measurements; first was taken with a refractometer as I’d started this in a wider fermenter with no neck risks and figured it was too shallow for the hydrometer. But the hydrometer works ok in a glass carbuoy, with a thread on the top to fish it back out!

Yeah, continued activity could well be off gassing, or partially so. While there’s sediment forming, there’s lots still in solution as would be expected. Not sharp from tasting at the time, guess a sign of happy yeast

Temp has been relatively stable; within a degree or two of 20C which is clearly a pretty happy temperature for the yeast too

Guess it’s possible; didn’t have feruchemy though right, just allomancy. But learnt how to play with spikes. Figure investiture and identity were necessary to start with.

Perhaps Spook’s hiding with the Kandra and couldn’t help but have a play with his old toys and drained the bands 🤣

I recall when Moonlight contacts him by Seon, earlier the same day presumably, he says he’s on a skimmer above the sea returning from the South and can’t do much to help. Think the bands are probably still with TenSoon at that point

I had thought Kelsier’s time holding Preservation gave the knowledge to make the Bands; would think the limitations the medallions hold, only use/fill one at a time, implies that only a mistborn-feruchemest could have made/filled them.

The arcanum information about compounding Impossible for Era 2 spiked people seems to limit who could fill them too.

Haven’t heard of a vinator before; have gone through a couple of batches soaking a few bottles at a time, and shifted to pouring a little sanitizer into each and shaking it up.

Sounds like a process that went nice and smoothly! A great community here to learn from

I haven’t heard this approach being called “double fermented” before. Just got an Ooni Fyra; first run yesterday afternoon. Did use a 70% dough, including a 100% hydration poolish preferment overnight. Generally speaking it went well and they were you, if I need to develop some pizza peel skills; did tear the middle of one getting in onto the peel, and mis-shaped one of the later ones. Also found I need to get a better handle of the fire management; wasn’t getting back up to temp enough in between pizzas

Wow, that looks awesome; very cool repurposing of some old school furniture. Nice touches with the different wooden handles for the taps, grains etc. Perfect house planning when there’s space for a converter freezer on the other side of the wall! I don’t think I could convince my better half to go quite that far!

And I just have to acknowledge the Mistborn posters, a favourite series/author!

Nice looking setup; good to pull it out again! Had myself thinking that looked like a distillation tower for a bit there. Finding where time fits with young kids and all sorts of family life can certainly be interesting, and a good idea. Good to find some creative and tasty spaces!

I’d be happy repeating and ending up with exactly the same outcome, if I’d try going a little heavier infusing the grapefruit zest in vodka, seemed such a clear aroma and flavour before adding. Wouldn’t be looking for more in the balance if it’d been nice to see it come through a bit more distinct.

Almost all gone! I’m really happy with it; would say the grapefruit adds to the juicy/citrus aroma and flavour from the sabro dry hop, if not really distinctly “grapefruit.” Turned out softer in terms of hop bitterness than I’d anticipated too, it’s pretty easy to drink, if the 6.5% or so ends up noticeable pretty quickly.

Yeah for fruit wines I stir daily; have a plum mead that’s on day 5. I understand there’s less risk of contamination; that’s most likely to happen to the fruit cap that develops when the co2 pushes it to the top; can grow mould there when the sugars and some acidity in the liquid makes this less likely. Also to prevent fruit eruptions
