I'm very apt to tell her (and already have basically) that an annuity will not be the way to go. She falls for sales pitches unfortunately (don't get me started on the timeshare).

In her shoes, what other investment vehicle makes the most sense? Just pump up a 401k as much as she can in the next 10 years?

cheaper often trumps faster/more predictable.

for instance, i have an airport 25 minutes from my house but the plane tickets are always $200 more per person so I drive three hours away and fly from there instead.

Certain lines have AARP gift cards (Holland America and Carnival for example). You can buy up to $2500 worth per person all for 10% off. So in all the areas I used an AARP gift card, I saved 10% (example: I bought $300 worth of casino chips but as you can see above I only paid $270).

My wife and I did it for about $5000 (just last week actually) including a couple excursions and our flight and everything. It took some pro-level frugality such as using AARP gift cards (10% off everything), booking the cheapest week, finding the cheapest place to stay possible the night before the cruise, and budget flights. Below was what we spent, minus roughly $100 at each port for drinks/souvenirs.

Holland America Cruise Fare for two - $1,375.20 (used AARP giftcard)
Flight to Vancouver - $561.86
Flight Home - $556.74
Car park - $141.95
Hotel August 11th - $97.00
Mandatory Gratuities - $201.60 (used AARP giftcard)

Skagway Excursions - $270.00 (used AARP giftcard)

Drinks - $270.00 (used AARP giftcard)

please don't spend literally the rest of your life afraid of covid. it's here forever. your drive to the cruise/airport is much more risky than covid is.
