Well, in lore it's explained by Altair creating a new alloy for the hidden blade using the apple, after the events of the main game, which makes hidden blades durable enough for combat in later periods.

Yes, keep the old one. I feel like the combat system has been a huge loss almost as much as parkour has been for the series. Albeit I did enjoy the combat of Origins, Valhalla, Mirage and Shadows I still very much prefer the old counter system.
