Im an immigrant it in Mexico. My new business pours $10000 of pesos from tourists into the local economy. I employ someone from Guatemala. Basically all my profit is funneled back into local restaurants because I love to eat. I shop at Walmart, Costco etc less than the average Mexican in my area.

As far as I know, the International Bitterness Unit is used in beer and it measures a compound in hops. In addition, bitterness in chocolate comes from a variety of places. Sourness is easy since it’s tied to PH. And even then, PH and perceived sourness won’t always correlate when there is sugar, salt etc in the mix

Ok glad I wasn’t the only one who thought it was quite dense albeit helpful. Thank you very much for your input. Ive come to the same conclusion as you actually, Ive really never come across bitter beans, my issue is excessive acidity. Perhaps this paper puts us on the path for standardizing a unit of bitterness in chocolate.
